While I agree with what you're saying in your post, I don't think this argument is really true anymore:,

Feature for feature (minus the display, ha, ha), a lot of Apples machines are cheaper than PC vendors. They just don't go as low end as other companies do.
However, this does not negate the 6-bit display issue. For what you're paying (and what they're advertising) you shouldn't be left with a dithering display.
